Homemade Cauliflower Soup

I don’t know about you, but when the weather is cold like it has been for us, I love to have a big bowl of hot soup to warm me up.  It has been cold and rainy and downright depressing here, a bowl of soup always seems to help bring me out of my funk.  When I was recently in London, I had cauliflower soup that was delicious!  I knew when I got back from my trip that I would have to make some homemade cauliflower soup for myself.  I have used cauliflower in a lot of recipes in the past, but I never thought about using it as a base for soup for some reason.  But let me tell you…it is sooo yummy!

Lucky for me I had most ingredients on hand and this recipe really is such a quick meal, which is perfect for my busy schedule!

The best part is adding a little bacon to the top…everything tastes better with bacon 🙂

Homemade Cauliflower Soup

Prep Time: 15 minutes

Cook Time: 30 minutes

45 minutes

Ingredients

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks of celery, diced
  • 1/2 cup flour
  • 4 cups reduced sodium chicken broth
  • 1 cup 1% milk
  • 1 head of cauliflower, chopped
  • 2 bay leafs
  • Salt & pepper to taste
  • Bacon (optional)
  • Parsley (optional)

Instructions

Melt butter in a stock pot and add garlic, carrots, celery and onion. Cook for about 3-4 minutes. Then add cauliflower and bay leafs and cook for an additional 3-4 minutes.

Then whisk in the flour, and then gradually whisk in the chicken broth and milk. Whisk constantly until slightly thickened, about 5 minutes.

Bring to a boil, then reduce heat to simmer for about 15 minutes. Be sure to stir occasionally so it doesn't stick to the bottom.

Serve and garnish with bacon and parsley.
