Caramel Apple Bites

Hey y’all…I’m so excited to share today’s recipe with you. I’m going to let you in on a little secret – I love caramel…a lot. I put it on top of vanilla ice cream, I order caramel macchiato’s at Starbucks and at this time of year I look for excuses to make caramel apples. 
Recently there was a flash video all over Facebook of someone making Caramel Apple Bites. It was just the excuse I was looking for to make something with caramel. It was also the perfect dessert recipe for my dinner party this week.
These bites are quick and easy to make. I love the tartness of Granny Smith Apples and they pair perfectly with the sweetness of the caramel.
I used a melon baller utensil to cut out the bite sized shapes from the apples.
Jennifer came up with the brilliant idea of using pretzel sticks in place of wooden sticks. We love mixing sweet and salty in our desserts.
The pretzel stick offers just a hint of saltiness with a bit of crunch. But the best part is that guests aren’t stuck holding a wooden stick – the entire caramel apple bite is 100% edible!
I melted the caramel on top of the stove over low heat.
I let the caramel cool for a few minutes so that it will thicken up and adhere better to the apple. I add just a little bit of caramel to the pretzel stick first and let it harden. The pretzel stick is then added into the apple.
Can you guess how long this one lasted? LOL
I added different toppings for a bit a variety…
A lot of people like chopped pecans…
Sprinkles are always a big hit, especially with kids.
I can’t tell you how delicious these are. I should know because I was the official taste tester 🙂
