Easy Strawberry Vinaigrette Dressing

I made this easy strawberry vinaigrette dressing for our Easter luncheon. It turned out so delicious, I couldn’t wait to share it with you!

Strawberry season

Strawberries seem extra delicious this year. They are super red, ripe and juicy. We have had to depend on grocery store berries for now. Our local U-Pick farms open next week!

This sweet-tart vinaigrette, made with fresh or frozen strawberries, honey, apple cider vinegar and olive oil is a delicious accompaniment to any simple tossed salad. While you can make the dressing with perfectly ripe strawberries, you can also use frozen berries.

Easy Strawberry Vinaigrette Dressing

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 8 ounces fresh, clean and stemmed strawberries. If using frozen strawberries, allow to thaw.
  • 2 TBS apple cider vinegar
  • 2 TBS olive oil
  • 2 TBS honey
  • 1/4 tsp salt
  • 1/4 tsp ground pepper

Instructions

  1. Combine all of the ingredients in a blender.
  2. Blend until smooth and creamy. About 1 to 2 minutes, depending on your blender.
  3. Serve immediately or store in a glass container in the refrigerator up to 14 days.
  4. Perfect on top of spinach salad, kale or garden salad.


 

Blend it up

What makes this recipe so easy? Everything is added to a blender all at one time. Then you simply pulse the ingredients until they are smooth. I added my blended dressing to a cruet. You can pour the ingredients into a mason jar with a tight fitting lid. The dressing will stay fresh in the fridge for up to 2 weeks. Trust me, it won’t last that long!

We love a good salad

Toss this Strawberry Vinaigrette Dressing over fresh spinach with crumbled goat cheese, sliced strawberries and almonds. I would prefer using candied pecans – but Jenn doesn’t like pecans at all. How can she be my child and not like pecans? LOL

Fresh is Best

You can really taste the strawberry flavor with each bite.

So easy to make

The apple cider vinegar adds a nice bit of acidity without being overpowering.

Creamy and mild goat cheese is perfect for the spinach salad. If you don’t like goat cheese, consider using blue cheese, manchego cheese or pecorino cheese. It was also nice to have extra helping hands in the kitchen! Jenn put together this spinach salad for our holiday luncheon. You don’t need to wait for a holiday to try this yummy vinaigrette.
