Brussel Sprout and Bacon Salad

So I know what y’all are thinking…”Brussel sprouts, really?” For those of you who don’t like brussel sprouts, I am right there with you. I was never a fan. But when I had this brussel sprout and bacon salad a couple of years ago, I became a brussel sprouts lover! This is my sister in law’s recipe and I have made it numerous times and get the best compliments on it. Not only is it easy to make, it has tons of flavor!

Funny Story!

I am totally going to embarrass myself with this, but it is too good not to share. I made the brussel sprout and bacon salad for a recent potluck at work, which I had made before and knew everyone in the office loved it. Typically I am able to find already chopped brussel sprouts, but on this occasion, the store was out, so I had to get whole brussel sprouts. I was not thrilled with this development, as I only have a mini chopper and not a food processor. But, I had already committed to making the salad and there was not much I could do.

With the small chopper, I could only put about 2-3 brussel sprouts in at a time, so it took me quite some time to get through them all. But I did it and the salad was a hit! Although I may have mentioned a few times that it took me much longer to make than it usually does.

So a few weeks later I was looking for something in the kitchen. We have these unique cut out cabinets as you enter from the living room to the kitchen and they are great for storage. At any rate, I was perusing those cabinets when I found a food processor that I totally forgot I had! Y’all, I couldn’t believe it. It was one of those things that was just out of sight out of mind. How embarrassing! Now I know for the next time.

Salad with bacon and brussel sprouts

Brussel Sprout and Bacon Salad

Servings 6

Ingredients

Salad

  • 4 dozen Brussel Sprouts chopped
  • 6 slices cooked bacon crumbled or chopped
  • 1 cup almonds sliced
  • 1/2 - 1 cup craisins
  • 1 cup pecorino-romano cheese grated

Vinaigrette

  • 1 lemon
  • 1 orange
  • 1/4 - 1/2 cup olive oil extra virgin
  • 1 shallot minced
  • salt & pepper to taste

Instructions

Salad

  1. If you are unable to find already chopped brussel sprouts in produce section, then shred them in the food processor. 

  2. Add almonds, cheese, craisins, and bacon and mix together with the brussel sprouts.  

Vinaigrette

  1. Squeeze out the juice of the lemon and orange into small bowl.

  2. Then add the minced shallot, olive oil, salt and pepper.

  3. You can also add some of the zest of the lemon and orange if you would like. 

  4. Mix the brussel sprout salad and vinaigrette together once ready to serve. 

For the vinaigrette, you can play around with this and find the right balance for you. Some may prefer more citrus and less oil, or vice versa. Also, you can make the salad the night before, but I would wait to add the dressing until the next day.

This brussel sprout and bacon salad is great any day of the week. You can make it for a party, or for a regular night in. It has easily become one of my go to recipes. Plus bacon makes everything taste good, right?!

  1. I love brussels sprouts you guys but in a million years I would never have thought to put raisins in a salad like this. I totally have to try it now!     1. Hey CoCo – brussels sprouts are not a favorite in our family. This recipe was a game-changer for one of us (Jenn) LOL. Being that we are back on track with healthy eating, this salad is in our rotation with less bacon added. We hope that you like it as much as we do! Much love!
