Fresh Peach Salsa

Hey y’all…I hope you are having a great Summer. It’s hard to believe that school started back last week in our neck of the woods. It seems like the kiddos didn’t get much of a break…I’m sure they feel that way too LOL. On the home-front, I continue to embrace the country life and all of its bounty. I feel so fortunate that no matter which direction I travel from my home, there are farmer’s markets, produce stands and private veggie growers. Honey Bee and I have eaten so many great fresh veggies and fruits this Summer. We’ve even embraced “Meatless Monday’s” in our weekly meal plan. As you know this has been a stellar year for our local peaches and tomatoes. I have a real fear that one day very soon, the peach and tomato baskets and bins will be empty. I’ve been pretty proud of myself for creating original recipes throughout the season. In the meantime, I am trying to see if someone can teach me how to preserve tomatoes and peaches. Anybody have any suggestions or foolproof methods? Until then, I enjoy being creative in the kitchen and am so happy with my original recipe for fresh peach salsa.
These peaches and red bell peppers were fresh-picked the day I bought them. On Sundays we like to have snacks in the afternoon. The fresh peach salsa was perfect. It’s light, flavorful and not too sweet.
Ingredients
- 4 large fresh, ripe peaches - peeled, pitted and chopped
- 2 large ripe tomatoes seeded and rough chopped
- 1/2 medium red onion finely chopped and divided
- 1 red bell pepper chopped and divided
- 1 small jalapeno pepper finely chopped
- 1/2 bunch of cilantro chopped
- Salt
Instructions
In a food processor add the chopped tomatoes, 1/2 of the chopped red onion and 1/2 of the chopped red bell pepper.
Puree until all of the mixture is blended well.
Add this mixture to a medium mixing bowl.
Add all of the remaining ingredients.
Stir well. Cover and refrigerate for one hour before serving.
Serve with your favorite tortilla chips.

We think it would be great served on top of grilled chicken too.
I served the peach salsa in mini jars so that we could each have our own.
Thick corn tortillas are my favorite chips with salsa…they don’t break.
This is goodness on a chip right here…
I’m going to continue to visit the markets and the stands a few times each week. But the day the peaches and the tomatoes are gone…I can’t even think about it 🙂
