Baked Chicken Salad…

Hey there…Today we bring you another family recipe. We always referred to it as Hot Chicken Salad in our house. But in today’s homes “hot” connotes spicy – so we started calling it Baked Chicken Salad. No matter what it’s called, it is delicious!
My mother used to make this dish for our family about once a month. I don’t make it nearly that often – I wish I did. This recipe is easily doubled, which I typically do and freeze the second casserole for later. This is an easy to make for your family chicken dish as well as a crowd pleaser. I make this recipe for just Honey Bee and myself and I have made it for 60 people! Everyone loves it š
If you freeze this dish, DO NOT use potato chips on top. Always crush potato chips just before baking.
Ingredients
- 2 cups cooked chicken
- 2 cups coarsely chopped celery
- 1/2 tsp salt
- 1 cup mayonnaise
- 2 TBS fresh lemon juice
- 1/2 slivered almonds
- 2 tsp grated onion
- 1/2 cup grated cheddar cheese (I use more)
- Potato chips
Instructions
Mix everything together except the cheese and the chips. Spread in a 13x9 pan. Sprinkle the top of the chicken with cheese. Just before baking, crush potato chips on top cheese.
Bake at 350 degrees for 30 minutes, until cheese bubbles on top.
