Southwest Chicken Salad

I love Mexican food and could seriously eat it almost everyday! But let’s be honest…it’s not always the healthiest for you.
And this is exactly why we love Weight Watchers because I can find healthy recipes that taste good and quench my cravings. So when I found this Southwest Chicken Salad recipe I had to try it. And lucky for me it did not fail.
Ingredients
- 2 medium uncooked scallions, chopped
- 1/2 medium sweet red pepper, chopped
- 1/2 medium green pepper, shopped
- 15 oz. canned black beans, rinsed and drained
- 2 medium corn on the cob, kernels removed (I used canned corn)
- 2 Tbsp fresh lime juice
- 8 oz. roasted skinless boneless chicken breast, chopped
- 2 Tbsp reduced sodium taco seasoning, about 1/2 of the packet
- 4 Tbsp cilantro, fresh, chopped
- 4 Tbsp fat free sour cream (I used 2% Fage)
Instructions
Combine scallions, peppers, beans, and corn in a large bowl; toss until well mixed.
Add lime juice and oil to bean mixture; toss to coat.
Add chicken, taco seasoning, and cilantro; toss.
Top with sour cream and serve.

I just used a can of corn instead of corn on the cob in order to cut down on time.
I love lime, so I know I used more than what the recipe calls for…
I also love fresh cilantro…
You can make it into a wrap, put it over a salad, or even over tortilla chips. I’ve tried it all three ways and can’t decide which one I like best…they all taste great!
