Slow Cooker Parmesan Chicken with Orzo

As you all know, the crock pot is my best friend!  My day job (I say that with a slight whimper) has pretty much taken over my life.  The last thing I want to be doing when I get home at 9:00pm is make dinner.  This weekend I was trying to find new recipes so that I don’t get bored with the same ole same ole, and I found this one from How Sweet It Is.  This Slow Cooker Parmesan Chicken with Orzo recipe was right up my alley and seemed super easy to make.  It definitely did not disappoint!

Slow Cooker Parmesan Chicken with Orzo and Broccoli

Ingredients

  • 3 chicken breasts
  • 4 tbsp olive oil
  • 6 tbsp white wine
  • 1 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/4 cup grated parmesan cheese
  • 4 cloves of garlic, minced
  • 1 cup uncooked orzo pasta
  • Package of frozen broccoli
  • Salt & pepper to taste

Instructions

You will whisk together 3 tbsp of olive oil, 3 tbsp white wine, basil, parsley, garlic, and 1/4 cup parmesan cheese. Place the chicken breasts in a ziploc bag and pour the marinade over it. Leave in the fridge overnight.

The next morning, place the chicken in the crockpot, add 3 tbsp of white wine, and cook on low for 6-8 hours.

Cook the orzo using the instructions on the package. After this has cooked, combine this with 1 tbsp olive oil, 2 tbsp parmesan and salt and pepper. Then combine the chicken (you can either shred this or cut it into bite size pieces) and veggies.

This recipe was a huge hit in our house and we can’t wait to make it again! It was flavor and filling… it also made great leftovers 🙂 What’s your favorite crockpot recipe?

    1. Hey Lisa – orzo is like a mix between rice and pasta. You aren’t kidding – we love crockpot meals with our busy work schedules. I keep hoping for some down-time but it’s not happening yet…a girl can dream. Thank you so much.
