Slow Cooker Northern Bean & Spinach Soup

I don’t know about you, but I love slow cooker recipes. After a long day of work the last thing I want to do is make dinner, which is why the crock pot is perfect. Dinner is ready for you when you get home! There is nothing better than a hearty bowl of Slow Cooker Northern Bean and Spinach Soup.
I found this hearty soup on SparkPeople and have now made it several times! It is perfect for the colder months and is full of flavor. It also doesn’t hurt that it is healthy for you. Even though it was on SparkPeople, I put it into my Weight Watchers recipe builder (another reason why we love WW) to get the points plus value. I also changed the directions a little and it still tastes great! Here is my recipe for Slow Cooker Northern Bean and Spinach Soup.
- 1 cup dried northern beans, rinsed (Soak them overnight)
- 2 carrots, chopped
- 1 medium onion, chopped
- 2 garlic cloves, sliced
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp oregano
- 1/4 tsp thyme
- 4 cups low sodium chicken stock
- 1 cup diced tomatoes, no salt added
- 2 cups fresh spinach
- 1 packet of light kielbasa or smoked sausage, chopped
Place the dried beans in slow cooker and add water. Cover and let them soak overnight. (Do not turn on slow cooker).
In the morning, drain and rinse beans.
Along with beans, add the carrots, onion, garlic, spices, and stock, and cook on low 6 - 8 hours.
About 20 minutes before serving, add the tomatoes, spinach and sausage to the slow cooker. Replace the lid and cook on high for 20 minutes.
You are then ready to serve!
