Mini Cheesecake Dessert Bar

Hey y’all…We hope that you have been enjoying your holidays. It feels so wonderful to have a bit of downtime to relax and spend meaningful time with family and friends.
One of our favorite things to do during this time is…EAT – or should we say, over-eat! Do you and your family do this too? We make lots of our favorite meals, appetizers and sweets. It’s the one time of year that we throw caution to the wind and pretend our yummy favorites are calorie-free! The main criteria is that there is no muss or fuss. We don’t like to be stuck in the kitchen while everyone else is having all of the fun.
We have a repertoire of easy party and holiday recipes that we have collected through the years. Most of our collection is from family and friends.

We are excited to share our mini cheesecake recipe and dessert bar. This recipe fits the party criteria…it’s from Vicki’s mom and Jennifer’s grandmother, Barbara. It’s super simple and easy to make.
Ingredients Instructions Preheat over to 350 degrees.
Line miniature muffin tins (tassie size) with miniature paper liners.
Crush Nilla Wafers and place 1/2 teaspoon of crushed wafers into each paper liner.
In a mixing bowl beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each minature muffin liner with this mixture - almost to the top.
Bake for 15 minutes. Cool.
Serve with toppings of your choice.
These mini cheesecakes are the perfect sweet treat for party guests.
We like to create a dessert bar for our get togethers. We share a few dessert options. We display the mini cheesecakes on a pedestal tray. We lay out several toppings for guests to choose from. Our favorite topping choices are crushed Oreos, chopped toasted pecans and peppermint candy.
Other toppings are chocolate syrup, caramel sauce, fresh fruit and chocolate chips.
These individual cakes make it easy for guests to pick them up and create exactly what they want. The best part is that there is no extra mess or need of plates and forks.
These are always a big hit at our house!
