Italian Tomato Soup

As soon as our weather chills the soup pot makes its appearance in the kitchen. Soup is eaten in my home at least twice a week if not more. Not to sound like a braggart, but I consider myself to be a pretty good cook. The other day it was extra chilly outside and I was craving a flavorful soup. After a quick peek into my pantry I pulled out the makings for what I hoped would be a tasty soup. My recipe for Italian tomato soup was born!

Our family loves practically anything Italian…the food, the people, the country and the lifestyle that they represent. Honey Bee is of Italian decent which means that Jenn is too. Personally I love most foods that are tomato based, such as sauces, soups and salads. This soup is now going to be my favorite go-to comfort food of the season.

Here is how you can make Italian tomato soup.

Italian Tomato Soup

Ingredients

  • 3 TBS olive oil
  • 2 cloves of garlic, minced (you can use more if you love garlic)
  • 1 small onion, diced
  • 1 large carrot sliced thin
  • 1 can petite diced tomatoes
  • 2 cups chicken stock
  • 1 package of Lipton's dry onion soup mix
  • salt and pepper seasoned to your taste (we found there to be enough salt flavor without adding more)
  • 1 TBS dried basil
  • 1/2 tsp celery seed
  • fresh basil (optional)
  • fresh grated parmesan (optional)

Instructions

Add olive oil, garlic, onion, carrots and celery to pot. Simmer until vegetables are soft.

Add chicken stock, soup packet, tomatoes, salt, pepper and dried basil to pot.

Simmer for 30 minutes.

Garnish each soup bowl with fresh grated parmesan and chopped fresh basil.

There is nothing better than a steaming hot bowl of soup to warm you up on a cold day.

Can I be completely honest with you? For me it doesn’t even have to be cold outside, I love to eat soup year round. It’s a meal in a bowl, and there are usually lots of leftovers 🙂 Paired with a salad and some toasty Italian bread is our preferred meal. Oh, and don’t forget the wine!
