Healthy Shrimp Stir Fry

As you know I have been trying to eat healthier and cleaner, which for the most part has been going well.  I had a couple of “slip ups” this weekend, but it was bound to happen.  I can’t be perfect all the time 🙂

As much as we love Mexican food, we also love Asian…I especially love curries and stir fries.  I attempted to make a healthier stir fry recipe that I think turned out really well and was easy to do.  And the great thing is, you can pretty much throw in any veggies you want.

Ingredients for Healthy Shrimp Stir Fry - kale, quinoa, garlic, mushrooms, soy sauce, hot sauce, olive oil, green onions

Healthy Shrimp Stir Fry

Yield: 2 servings

Ingredients

  • 8 oz. shrimp
  • 1 tbsp olive oil
  • 2 cups kale
  • 1 green onion
  • 1 cup cooked quinoa
  • 3 mushrooms
  • 2 cloves of garlic
  • 2 tsp low sodium soy sauce
  • Hot Sauce to taste
  • Salt & Pepper to taste

Instructions

First you will heat 1/2 a tbsp of oil in a skillet. Once hot, add the shrimp and cook for a few minutes. Then add the garlic and cook for an additional 2 - 3 minutes. Once cooked, remove from skillet and add to plate.

Then heat the remaining oil and add the mushrooms. Cook for about 2 - 3 minutes. Then add the kale, green onions, quinoa, and any other vegetables you want. You will also add the soy sauce, hot sauce, and 2 tsp of water.

Let this cook for a few minutes and then add the shrimp and garlic back to the skillet. Cook for an additional 5 minutes or so and serve.

Now anyone who knows me knows that I am not a huge fan of seafood and shellfish, let alone cooking it.  For this reason I get the already cooked shrimp, which also makes my life a little easier.

I then add the kale, quinoa, green onion, low sodium soy sauce, and hot sauce to the skillet.

After everything is mixed, it’s time to eat and I’ve got to say…it was pretty delicious.

Now I need to find a clean eating recipe for curry…if anyone has one I’m all ears 🙂
