Buffalo Chicken Wrap…Quick Dinner Recipe for the Holidays – and it’s Weight Watcher Friendly

The holiday season is fast upon us and I’m already feeling overwhelmed.  Being that I have been sick since the last week of October, I am definitely playing catch up with decorating, shopping and, well…everything.

At this time of year I like to have quick-supper items on hand to make my life a bit easier.  Weight Watchers makes it easy to maintain and still lose weight during the holidays. I recently experimented with a recipe because I was having a craving for Buffalo chicken flavor.  This is what I created:

Buffalo Chicken Wrap…Quick Dinner Recipe for the Holidays – and it’s Weight Watcher Friendly

Ingredients

  • Boneless, skinless chicken breast cooked and shredded.
  • Ole' Extreme Wellness Tortilla
  • Laughing Cow Light Blue Cheese wedge
  • Frank's Buffalo Wing Sauce

Instructions

Lay the tortilla flat on a plate.

Spread the cheese on the tortilla

Sprinkle chicken down the middle of the tortilla.

Pour the buffalo sauce on the chicken.

Fold the wrap.

Eat and Enjoy

For Weight Watchers purposes:

Each ounce of chicken is one point

Each tortilla is one point

Laughing Cow Light Blue Cheese wedge is 2 points

Frank's Buffalo Sauce is zero points

To make cooking even easier, I precook a lot of chicken, separate it and package it in  individual freezer bags.  Even if I forget to take a package out of the freezer, it thaws very quickly.

I choose to boil the boneless, skinless chicken breasts. This keeps the meat very moist and tender and I don’t need to add any oils or fats. I cut up onion, carrots and garlic to add to the pot as well as salt and pepper. This adds wonderful flavor to the chicken. Another bonus is that the leftover liquid becomes savory chicken stock to use during the week.

Ole’ Extreme Wellness Tortillas have the absolute lowest points value out of any other tortillas that I have looked at.  The best part is that they taste good – not chewy or doughy.

The Laughing Cow Light Buffalo Cheese is the key to the authentic taste.  This cheese is typically on an end cap at my Publix grocery store,  not refrigerated. It’s very creamy with a touch of tanginess and spreads like butter.

This Buffalo Chicken Wrap definitely takes care of my craving. It’s spicy and yummy without the guilt. I usually have broccoli slaw or other salad on the side.
