Spiral Sweet Potato Noodles with Fried Egg, Bacon, & Vegetable Hash

I know I mentioned a few weeks ago my obsession with our spiral vegetable slicer and this obsession has not waned š Ā It really has made cooking more fun and creative. Ā I also found a new food blog that is amazing called Inspiralized and is full of awesome recipes that fits any mood. Ā We like to eat breakfast for dinner about once a week in our household and when searching through the site I found this recipe that was perfect for us! Ā I mean it has eggs, bacon, sweet potatoes, onion, and cheese…what’s not to love?
Ingredients
- 2 small, round sweet potatoes
- 4 strips of bacon
- 1 tbsp olive oil, divided
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp chili powder
- salt and pepper to taste
- 4 eggs
- 1 garlic clove, minced
- parmesan cheese
- parsley
- olive oil cooking spray
Instructions
Peel the sweet potatoes, cut the ends off, and spiralize.
Cook the bacon per package instructions and cook until desired cruchiness. Transfer to a plated lined with a paper towel and let cool. Then cut into 1 inch pieces and set aside.
In bacon skillet, add the olive oil over medium heat and then add the sweet potato noodles, garlic powder, and salt & pepper. Cook for about 5-7 minutes or until sweet potato softens. When done, transfer to a plate.
While the sweet potato noodles are cooking, set a large skillet over medium-low heat and add remaining olive oil. Once heated, add the garlic for about 30 seconds. Then add the onion, peppers, oregano, and chili powder. Cook for about 2-3 minutes. You will then mix in the bacon and set on top of the sweet potato noodles.
Wipe down the vegetable hash pan and spray with cooking spray. Add in the egg and cook.
Place eggs on top of noodles and hash. You can then season with parmesan cheese and parsley if you'd like.
