Slow Cooker Greek Chicken

By now you know that I am obsessed with my slow cooker and I’ve found another great recipe! It has tons of flavor and is super filling. Plus I love Greek food and this really helps that craving in a healthy way.
Ingredients
- 1 cup Quinoa
- 2-3 Chicken Breasts
- 1 Red Onion, diced
- 2 Cups Vegetable Broth
- 1/2 cup Greek Yogurt
- Juice of 1 Lemon
- 1 Tbs. Oregano
- 1 Tbs. Basil
Instructions
In the slow cooker, mix all of the ingredients together except the chicken and quinoa.
Then place the chicken on top and cook on low for 6 - 8 hours.
Right before serving cook the quinoa on stove top according to package instructions.
When serving you can also incorporate kalamata olives, cucumber slices, and feta cheese.

I just use a whole can of vegetable broth…
Once my herbs grow a little bit more, I would like to incorporate fresh oregano and basil, but for now this will do.
I just hand squeeze the lemon…one of my friends used her citrus press and she said it was a bit too lemony.
When I get home I cook the quinoa, which takes about 10 minutes and then it’s ready to go! Such an easy recipe that is packed full of flavor…and makes my hectic life a little easier 🙂
