Creamy Corn Salad – Summer Salad Series

Do you like to cook? I do, especially in the summertime when fresh vegetables and herbs are more plentiful. Sometimes I try to make dishes that don’t require me to turn on the oven. Here in the South it gets pretty hot, especially as the summer progresses. There’s no need to swelter outside of the house as well as inside in my opinion. Typically for supper Honey Bee grills out fish, chicken or shellfish and I make the accompanying side dishes. This past week I was feeling culinarily creative in the kitchen and I came up with a delectable that I call creamy corn salad.
Creamy Corn Salad – It’s Delicious!
In addition to not wanting to be hot in the kitchen, I don’t want to spend a lot of time having to cook and prepare dishes. For me summertime food needs to be easy, breezy and quick. I also like things that I can prepare ahead of time earlier in the day.
For quicker prep time, I used the microwave to cook bacon. All of the other prep was complete while the bacon was cooking.
Ingredients
- 2 15 ounce cans of whole kernel corn, drained very well.
- 2 ripe medium tomatoes, seeded and chopped.
- 6 medium fresh basil leaves, chopped
- 1/2 cup good mayonnaise
- 4 slices crispy bacon
- 1/4 cup diced green onion
- 1/8 tsp Chipotle pepper season (optional) omit or use sparingly to your heat preference
- salt and pepper
Instructions
Mix all ingredients in a medium bowl.
Add salt and pepper to your taste.
Make ahead earlier in the day for better flavor, but not necessary.

I don’t know what possessed me to try out a brand new original recipe when we were having company come over. Thankfully everyone really liked the creamy corn salad and even asked for seconds!
Smokey bacon really adds great flavor to the creamy goodness too!
This dish will definitely be served this weekend for Father’s Day. I know all of the dad’s in our family will just love it!
The longer this salad sits in the fridge, the better it tastes. Unfortunately the leftovers never last very long!
Feel free to use fresh corn too. Again…I didn’t want to spend that long in the kitchen 🙂

I made this for Father’s Day to accompany bbq ribs. It was delicious. Made earlier in the day so flavors could meld and also added two ribs if celery, diced, for added crunch. This easy recipe is a keeper?
