Creamy Broccoli Cheddar Soup

Last week I was viewing my Instagram feed when I happened upon a photo of a soup recipe that sounded delicious. I then viewed this persons blog post for the recipe – Shaken Together – sounds great, right? Her post can be found here. She has wonderful photos and content.
It happened to be an unexpected chilly day – as we had previously been experiencing beautiful Spring weather. I also had all of the ingredients on hand for this delicious Creamy Broccoli Cheddar Soup.
- 6 cups of broccoli florets, cut small
- 2 TBS diced onion
- 1-2 TBS olive oil
- 1 cup unsalted butter
- 1 cup all purpose flour
- 1 bouillon cube - chicken or beef
- 6 cups milk
- 3 cups shredded sharp cheddar cheese
- 4 dashes Worcestershire sauce
- 1 cup stock - chicken or beef
- salt and pepper to taste
In a large skillet, saute broccoli and onions in olive oil until tender, then remove from heat.
In a large stockpot, melt butter over medium heat and whisk in flour until blended.
Add bouillon cube to butter mixture and stir until dissolved.
Add 3 cups of milk, whisk until incorporated and add remaining 3 cups of milk.
Simmer cream sauce until it thickens.
Stir in cheddar cheese, Worcestershire sauce, stock and salt and pepper.
Once the cheese soup is smooth and creamy, stir in sautéed broccoli and onions.
Serve immediately and garnish with additional cheese, broccoli or crackers.
I must say – adding the Worcestershire sauce really enhanced the flavor of this soup. I never would have thought to add it.
The soup was flavorful, creamy and wonderful. Honey Bee loved it too! I am the type of person that eats soup year-round…even in the Summer. There is something comforting to me when I eat it.
