Buffalo Chicken Tortilla Roll Ups

Buffalo Chicken Tortilla Roll Ups are perfect appetizers for the Super Bowl or any party and get-together.

Before I tell you about these super-delicious buffalo chicken tortilla roll ups, let me tell you what’s been going on.

Oh my goodness friends, what a week last week was! First, our garbage disposal and sink were clogged. Typically on these rare occasions we pull out the plunger, add a little bit of Draino and we are good to go. Well no…we had to call in the big guns -a professional plumber. When he arrived, and right before my eyes, he opened the kitchen sink cabinet and the disposal crashed down and the pipes came apart. The plumber had to add a brand new garbage disposal and pipes. But then the drain was still clogged. Our plumber then had to run not one, but two snake lines down our main drain before the clogged drain was cleared…to the tune of $490.00!

Rough Week

Then on Friday our internet and cable were out of service for the entire day until 11:00 PM! A landscaping contractor cut a major cable and service was out for two large subdivisions. This meant not only could we not watch television, there was no way for me to work. I couldn’t edit photos, write a post, create a newsletter, etc.

Food Makes Everything Better

So – my efforts turned towards food LOL. Honey Bee and I, as well as many of our dear friends, attended a CPR class on Saturday. Afterwards we held a Mexican Fiesta of sorts in our neighborhood community. It was a potluck affair and each of us brought a dish. Being that my kitchen had been out of commission, I looked for recipes in my recipe box for items I already had in the house and that were easy to make. Even though this dish isn’t “Mexican” it is a bit spicy and it does call for tortillas. Most importantly, it is delicious and easy to make.

Whenever I make chicken breasts, I always cook extra. Whether they are grilled or roasted, I love to have one or two made ahead that I put on salads or in other recipes. I even shred the chicken meat and freeze it to have on hand for easy meal prep.

Please tell me that you are already familiar with Frank’s Red Hot Wings Buffalo Sauce. It should be available in your grocery store and it is delicious! You can add it to any chicken dish, wings and more.

Green onions are so fresh and tasty. When added to the top of these roll ups, they are the finishing touch.

Buffalo Chicken Tortilla Roll Ups

Super delicious as an appetizer, snack or a meal. Think of your favorite Buffalo chicken wing, wrapped inside of a tortilla...that's what this is!

Ingredients

  • 2 cups shredded cooked chicken
  • 8 ounces light cream cheese, softened
  • 3/4 cup Buffalo wing sauce
  • 1/4 cup blue cheese crumbles
  • 3 TBS sour cream
  • 1 cup finely shredded cheddar cheese
  • 5 large flour tortillas
  • 4 green onions, thinly sliced more or less based on preference

Instructions

  1. In a mixing bowl combine the blue cheese,cream cheese,sour cream and the cheddar cheese.

    Toss in chicken with 3/4 cup buffalo wings sauce.

    Lay a tortilla out on a plate and spread an even layer of the chicken and cheese mixture all the way to the edges (about 3 tbsp).

    Roll up tortilla tightly and place on a plate and then repeat until all the ingredients have been used.

    Using a serrated knife, slice the ends off of each tortilla to even out flat.

    Using the same knife, slice each tortilla into 5 pieces each and place onto a platter.

    Garnish with sliced green onion.

    *For sake of time, you may mike the filling ahead of time and refrigerate until ready to use. Mix well to warm it up a bit for better spreading.

    *If you make the roll-ups ahead of time, cover them with a slightly damp paper towel an then cover with plastic wrap. This helps to keep them from drying out.

I love an appetizer that is easy to assemble and can be prepared in advance. Especially if this is for a party or the Super Bowl! Am I right? Who wants to be stuck in the kitchen when everyone else is having fun?

These can be made a few hours ahead of time and kept refrigerated. Place a slightly damp paper towel on top of them to ensure that the tortillas don’t dry out.

You can even make the filling the night before and assemble them just before party, which is what I did this time.

Our family likes lots of green onions on top of ours. Can you tell?

These were a big hit and my platter came home empty. Not to despair – I saved a little bit of the cheese mixture at home and created a couple of buffalo chicken tortilla roll ups for Honey Bee and I for a private happy hour treat.

Hey CoCo – the fun never stops over here…issues with the sink, the internet, our power was out again the day – a giant cable was dug up and cut 😏It’s a surprise when something does get accomplished LOL.
