Delicious Blueberry Muffins – Mom’s Recipe

Delicious blueberry muffins – easy to make and super moist.

This summer blueberries have been abundant. Recently I visited a friend and her blueberry bushes were overflowing with fruit. We picked berries and within just a few minutes we had filled a bucket. Our household has been grateful for the bounty. One of the first things I made were delicious blueberry muffins.

I mean – who can resist a freshly baked blueberry muffin? Warm out of the oven with a little bit of butter slathered in the middle is how I like them best.

This is my mother’s recipe – so it is definitely tried and true. There is no telling of how many delicious blueberry muffins I have had in my lifetime. Maybe we shouldn’t dwell on that LOL.

Delicious Blueberry Muffins

Easy to make and super moist blueberry muffins.

Ingredients

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1 tsp pure vanilla extract
  • 1/2 cup butter, melted and slightly cooled
  • 2 cups fresh blueberries. You can use frozen berries in a pinch.

Instructions

  1. Preheat oven to 375 degrees. Prepare a 12-cup muffin pan with non-stick cooking spray or paper liner cups.

  2. In a large bowl, stir together eggs, milk, melted butter and vanilla. 

  3. Now add flour, baking powder and salt - mix well.

  4. Add blueberries to the batter and gently fold in so as not to break the skins on the blueberries.

  5. Fill the muffin cups up to the top with batter. Bake in preheated oven for 15-20 minutes, until slightly golden brown and a toothpick in the center of the muffins comes out clean.

Most recipes don’t include vanilla extract, but I think it makes such a difference to the overall flavor.

The fresh-baked fragrance fills the entire house.

Some of the fresh blueberries have been stored in my freezer for later use. This way I can make delicious blueberry muffins anytime that I want!
