Banana Bread

Hey y’all…there’s just something about the arrival of Fall that makes me want to bake bread. It’s like my nesting instincts kick-in and I want to be warm and cozy with a warm slice of bread and a hot cup of coffee. My go-to recipes include English Muffin Bread and Pumpkin Bread. Today’s recipe came from a craving and having some over-ripe bananas that needed to be used.

This is my tried and true recipe for Banana Bread.

Banana Bread

Ingredients

  • 8 TBS unsalted butter - softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 very ripe bananas
  • 1 tsp ground cinnamon
  • 1 TBS milk
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 cups all-purpose flour

Instructions

Preheat over to 325 degrees. Grease and lightly flour a 9x5x3 loaf pan.

Cream the butter and sugar in a large mixing bowl until light and fluffy. Add the eggs, one at a time beating well after each addition

In a small bowl mash the bananas with a fork. Mix in the cinnamon and milk. In another bowl mix together the salt, baking soda, baking powder and flour.

Add the banana mixture to the creamed mixture and stir until combined. Add the dry ingredients. Mix just until the flour disappears. Do not over mix.

Pour batter into prepared pan and bake 1 hour to 1 hour and 10 minutes. Insert a toothpick in center to test for doneness - toothpick should be clean.

Cool for 15 minutes. Remove from pan. For better slicing, bread should be cooled completely.

We aren't that patient. We love to eat this warm with honey butter.

I grind cinnamon sticks for the freshest flavor, but you absolutely don’t need to do that.

My favorite part about baking is how the fragrance fills the house. One of the sweetest things my husband says to me when I bake is “I smell love in the oven”. That’s actually a true statement. I love to cook and bake and I do it from my heart. It makes me feel good to make other people feel good through my cooking.

Here it is, fresh out of the oven. You’re supposed to let this bread cool completely before cutting. HA…that never happens. Honey Bee and I are way too impatient for that and we each cut a slice as soon as it came out of the oven…
