Fumi Salad

Thanksgiving is tomorrow…yay!  And while we can’t wait to eat all of the customary dishes like stuffing, mashed potatoes, and pumpkin pie, it’s sometimes nice to make a side dish that’s a little different.  Fumi Salad is so easy to make and is a nice break from tradition.  Plus it is Asian inspired, which we love!

The first thing I did was toast the sesame seeds, almonds, and ramen noodles in butter…yum!

I then mixed together the cabbage and green onions while I let the pan cool down.

When this was done I got to work on the dressing!  You will want to put this on the salad only about 30 minutes before serving, but you can easily store it in a jar or bowl until you’re ready to serve.

Fumi Salad

Ingredients

  • I head of cabbage or 2 bags of shredded cabbage
  • 6 green onions sliced thin
  • 2 packages Ramen noodles - discard seasoning packets
  • 3/4 cup slivered almonds
  • 2 TBS sesame seeds
  • 4 TBS butter - maybe a bit more
  • DRESSING
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 3/4 cup oil
  • 2 TBS soy sauce

Instructions

Melt butter over medium heat. Break up Ramen noodles and add to the butter with the almonds and sesame seeds, being careful not to burn. You may need to add more butter as the noodles soak up the butter. Cook until nuts and seeds are toasted.

Combine all of the dressing ingredients in a pan. Boil for one minute until the sugar is dissolved. Let cool

Toss all salad ingredients together. Add dressing about 30 minutes before serving.

Once everything was cool, I mixed it together and it was ready to serve.  I actually brought this for a Thanksgiving potluck for the office and they loved it!
