Mom’s Southern Potato Salad – Summer Salad Series

Mom’s Southern Potato Salad

I think I have said this before, but my mother was a fabulous cook. Everyone in our family has favorite dishes that we loved for her to make. Being that the 4th of July holiday is coming up it reminds me of mom’s southern potato salad. What makes it southern? To be honest I’m not really sure…that’s just what she called it. Maybe it was the sweet relish or possibly the bacon. No matter what…it’s just delicious!

Mmm good!

As hard as I try it doesn’t always turn out exactly like mom’s. But when it does, it takes like a bit of home. I’ll be making this recipe this weekend as I suspect a few other family members will be too!

This potato salad is best if you can make it the night before. The flavors of the peppers, relish, celery and bacon taste great when they have time to meld together.

If you don’t have that much time, try and make it at least four hours ahead. It is best served cold.

I will do my best to honor mom and her traditional recipes this holiday week. At the same time I will prepare my own recipes and create new traditions.

I have been out of town on vacation in sunny California and will be returning to Georgia on Friday. Hopefully I will be sharing my dining room table makeover with you. Honestly, I can’t believe the transformation myself :) PicMonkey Image

Yummy, this sounds delish! I’m sure I must have eaten this a time or two at your mom’s table. You had me at “bacon!” Can’t wait to make this myself.

The recipe looks like what I fix, except no bacon..and I mix my mayo and mustard with a bit f vinegar and sugar…then add a bit of milk to mellow the vinegar. It really is delish.
