Slow Cooker Barbacoa with Cilantro Lime Rice

As you already know, we love Mexican food! So for this Mother’s Day I wanted to make a dish I knew my mom would love, but that was also healthy. This recipe has tons of flavor and is done in the slow cooker, which makes my life so much simpler 🙂
Ingredients
- First Part:
- 2 lbs pork loin lean
- Salt and pepper
- Garlic powder
- 1/2 can of Coke Zero
- 1/4 cup brown sugar
- 1/4 cup water
- Second Part:
- 1/2 can of Coke Zero
- 6 oz. can diced green chiles
- 8 oz. can tomato sauce
- 2 chipotle chiles in adobo sauce
- Garlic powder
- Cumin
- Cayenne pepper
- 1/3 cup brown sugar
Instructions
Season the pork with the garlic powder, salt and pepper and place in slow cooker. Then add the rest of the ingredients from "First Part" in the slow cooker and cook on high for 3 - 4 hours.
You will then remove the pork from the slow cooker and discard the remaining liquid.
Shred the pork. Trust me, it will be so tender! I actually use center cut loin chops and they work just as well.
You will then combine the ingredients from the "Second Part". Just trust your judgement on how much of the spices you want to use.
Add the shredded pork back to the slow cooker and mix together. Cook on high for 1 - 2 more hours.

When I first saw this recipe and saw that Coke Zero was included, I was a bit skeptical, but trust me…it works great in this!
While the pork is cooking, you can make the Cilantro Lime Rice.
Ingredients
- 1 cup of long grain white rice
- Juice from 1 lime
- 1/4 cup fresh cilantro
Instructions
Cook the rice according to the packet's direction.
Once cooked, transfer rice to bowl and add cilantro and lime juice. Mix thoroughly.

This is a filling dish, with a lot of flavor. We like to add black beans, as well as fage, which serves as our sour cream and avocado. It’s like your own burrito bowl 🙂
