Weight Watchers Polenta & Sausage

As I mentioned in my New Years Resolution post, I am working on losing weight to not only get healthy, but also to look great on my wedding day.  I was looking through an old Weight Watchers cookbook I have, trying to get inspiration for some healthy meals I wanted to make.  Then I stumbled upon this recipe for Weight Watchers Polenta & Sausage that I used to make all the time and somehow completely forgot about it!

After working all day, the last thing I want to do is make dinner, but this recipe is so simple and takes no time that I don’t mind cooking at all!

Here are the main ingredients you will need…

Polenta & Sausage - Weight Watchers Recipe

Yield: 4 Servings

Serving Size: 3 slices of polenta & 1 cup of sauce

Ingredients

  • 1 16 oz tube of fat free polenta, cut into 12 slices
  • 12 oz. of chicken sausage
  • 1 onion
  • 1 tsp olive oil
  • 1 8 oz. can of tomato sauce
  • 1/4 cup of water
  • 1/4 cup fresh basil, sliced
  • Spices to taste
  • You can also use a bell pepper in this recipe.

Instructions

Preheat broiler. Line cookie sheet with foil and spray with non-stick spray.

Arrange polenta slices on cookie sheet, then lightly spray the tops with non-stick spray. Broil on each side for about 3 minutes. Keep warm.

While the polenta is in the oven, heat your oil in a non-stick skillet. You will then add the onion, stirring often, for about 4 minutes or until softened. You will then stir in the sausage and cook until lightly brown, about 3 minutes.

Then stir in the tomato sauce and water. I also like to add more spices like garlic and oregano. Bring to a boil and then let simmer for about 2 minutes.

Serve over polenta and add basil on top.

I usually like to use fresh basil from my garden, but since it’s not quite the season for that, you can easily purchase some at the grocery.  You can also add bell peppers if you’d like.  I like the Al Fresco sausage because it has bell peppers already.
