This past Sunday I had a wonderful day. I managed to get some much needed chores completed in short order, allowing me to enjoy beautiful Springtime weather out on the deck. I sat on my chaise lounge armed with a cool drink, several magazines that I hadn’t had a chance to read and my iPad.
I’ve been so busy as of late that it felt really exhilarating to take a timeout and relax as a way to recharge my energy. I’m a firm believer that a bit of time spent outdoors enjoying nature is a natural energy booster.
After lounging around for a few hours I started to think about dinner and what Honey Bee and I could make. It needed to be super easy so as not to break our very relaxed mood. If y’all follow us on Facebook – you already know one of the side dishes we created. I was scrolling through my Facebook feed and a Country Living recipe popped up as an answer to my dinner dilemma…Smashed Potatoes. I had the potatoes in my pantry and knew I could create my own version.
Here’s what I did…
After the potatoes were boiled and fork tender I drained out the water and dried the potatoes. I laid them out on a baking sheet and smashed them down with my hand.
Drizzle each potato with olive oil. Here’s where you get to be creative. There’s no right or wrong – add the potato toppings that you like. I personally like rosemary with shallots and chives with garlic.
So glad I had a day to relax and discover a new potato creation! See you back here tomorrow!
