Smashed Potatoes…

This past Sunday I had a wonderful day. I managed to get some much needed chores completed in short order, allowing me to enjoy beautiful Springtime weather out on the deck. I sat on my chaise lounge armed with a cool drink, several magazines that I hadn’t had a chance to read and my iPad.

I’ve been so busy as of late that it felt really exhilarating to take a timeout and relax as a way to recharge my energy. I’m a firm believer that a bit of time spent outdoors enjoying nature is a natural energy booster.

After lounging around for a few hours I started to think about dinner and what Honey Bee and I could make. It needed to be super easy so as not to break our very relaxed mood. If y’all follow us on Facebook – you already know one of the side dishes we created. I was scrolling through my Facebook feed and a Country Living recipe popped up as an answer to my dinner dilemma…Smashed Potatoes. I had the potatoes in my pantry and knew I could create my own version.

Smashed Potatoes…super easy to make and very delicious!

Here’s what I did…

Smashed Potatoes…

Ingredients

  • Use small, red potatoes
  • Salt
  • Pepper
  • FreshGarlic
  • Fresh Rosemary
  • Fresh Chives
  • Fresh Shallots
  • Olive Oil
  • Grated Parmesan Cheese

Instructions

Boil potatoes, whole until fork tender

Drain and dry potatoes

Smash the potatoes down - you can use a potato masher - I used my hand

Drizzle each potato with olive oil.

Salt and pepper to taste.

Add your toppings of choice. I added fresh rosemary and shallots to some. I added garlic and chives to others.

Sprinkle all with grated parmesan.

Roast at 450 degrees for 10-15 minutes

Preheat oven to 450 degrees.

After the potatoes were boiled and fork tender I drained out the water and dried the potatoes. I laid them out on a baking sheet and smashed them down with my hand.

Smashed Potatoes…super easy to make and very delicious!Drizzle each potato with olive oil. Here’s where you get to be creative. There’s no right or wrong – add the potato toppings that you like. I personally like rosemary with shallots and chives with garlic.
