Homemade Vanilla Almond Granola

Recently, my bestie Bambi reminded me of making homemade granola. I realized I hadn’t made granola in a very log time. It can be made in a variety of ways with lots of additions. My favorite recipe is homemade vanilla almond granola. This simple recipe is perfect for breakfast or as a snack.

When it comes to oats, I prefer Quaker Old Fashioned. If I were to eat a bowl of oatmeal, it would be Irish Steel Cut Oats. But for baking purposes, nothing beats Quaker in my opinion.

Pure maple syrup just lightly sweetens the oats.

You mix all of the dry ingredients together. Who can resist fragrant cinnamon and nutmeg? Certainly, not me LOL.

The key to success for this granola is in the baking process. You need to turn the oat mixture every 10 minutes. This ensures that it won’t burn and that the oats are dried out for crunchy granola.

Homemade Vanilla Almond Granola is delicious and so simple to make! Perfect for breakfast or as a snack.

Ingredients

  • 2 cups old fashioned oats. I use Quaker brand
  • 1/2 cup almonds. I used blanched almonds. Feel free to use sliced, slivered or whole.
  • 2 TBS light brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp table salt
  • 4 TBS melted coconut oil or butter
  • 1 1/2 tsp pure vanilla extract
  • 1/2 cup pure maple syrup

Instructions

  1. Preheat oven to 325 degrees.
  2. In a large bowl add oats, almonds, brown sugar, cinnamon, nutmeg and salt. Set aside.Cinnamon and nutmeg
  3. In a 2-cup measuring cup, melt the coconut oil or butter. To the melted mixture add vanilla extract and maple syrup - whisk until well combined.
  4. Pour wet mixture over the dry mixture. Toss and coat well.
  5. On a cookie sheet, place a piece of parchment paper. Spread the granola mixture over the entire pan.Turn every 10 minutes to avoid burning
  6. Bake for 30 to 40 minutes, until the granola is slightly browned. Turn granola every 10 minutes. This eliminates burning and ensures that the granola crisps well.
  7. Remove from oven and let cool completely.
  8. Store in mason jar or air-tight container. We find that glass containers work best. Keeps for 4 weeks.
I store my granola in mason jars. This keeps the oats super fresh while maintaining their crunch and flavor.

My family loves this basic recipe because we all love the ingredients. You can definitely add other things to your granola mixture. In our family – one doesn’t like raisins, another doesn’t like cranberries, and so-on.
