Almond broccoli casserole and 13 Thanksgiving recipes from The Cooking Housewives.
As Thanksgiving approaches there is a lot of talk amongst family and friends about favorite must-have foods. This has been an eye-opener for me. Of course there was discussion of the traditional faire: turkey, pumpkin pie, dressing, mashed potatoes with gravy, green beans, squash casserole and sweet potato soufflé. The most surprising non-traditional entries were: Spam, ramen noodles, lime Jello, Spaghetti-o’s and baked beans. Personally my Thanksgiving meal isn’t complete without my Aunt Linda’s almond broccoli casserole.
Let’s face it, we all have our favorites. For me my Aunt Linda’s almond broccoli casserole was introduced to our family Thanksgiving repertoire when I as an adult. Actually it was the Thanksgiving I was pregnant with Jenn. Honey Bee and I surprised my entire family in Florida. We drove from Houston, Texas to my Aunt’s house in Jacksonville, Florida so that we could be with them for the holiday weekend. To say that my family was surprised by our arrival would be an understatement. Especially my parents and grandparents.
Anyway, during that special Thanksgiving dinner my aunt served this delicious crunchy almond casserole. Ever since I have made it every year for our annual feast. It’s a very simple, 4 ingredient recipe. For some reason I just love it! I hope that you do too.
- 2 - 10 ounce packages chopped frozen broccoli
- 1 can cream of mushroom soup
- 8 ounces shredded cheddar cheese
- 1 cup slivered almonds
- Italian bread crumbs
- salt and pepper to taste
- cook broccoli
- add cheese and mix with broccoli while hot.
- add soup undiluted, and 3/4 of almonds.
- add salt and pepper to your preference.
- bake in 350 degree oven until hot.
- during the last few minutes in the oven top with Italian bread crumbs and remaining almonds.
Did I mention that this is also very creamy too?
Everyone in our family loves this casserole. A definite crowd pleaser.
Maybe this will be a new traditional dish at your Thanksgiving dinner. My aunt would be thrilled if it were. I would too.
