Hey y’all…today I’m sharing with you a favorite soup recipe. By favorite I mean I make a pot of this Tuscan White Bean Soup every other week during the Fall and Winter. It’s loaded with flavor and it’s versatile depending on my mood.
Sometimes I add leftover chicken, other times I don’t puree the beans. The base of the soup always remains the same.
Here’s what you need…
We love the garnish of smokey bacon and shaved Parmesan.
For a truly Tuscan dish, drizzle a bit of olive oil over the soup before serving.
Adding the ditalini pasta gives the soup more substance and makes it a more hearty soup.
Honey Bee loves crackers when he eats soup, but I prefer a slice of toasted Italian bread.
