I am always on the hunt for recipes that are healthy and tasty. The foods I eat must be flavorful and easy to make in order to stay successful on my weight loss journey. This Creamy Thai Carrot Soup is packed with unbelievable layers of flavor. In addition to the great taste it is also very healthy. I found the original recipe on Weight Watchers (of course) and changed it up a bit to my taste.
The grated fresh ginger adds a wonderful flavor boost. It is aromatic, pungent and mildly spicy.
Add the broth, carrots, onion, ginger and garlic and begin to boil. The fragrance permeates the house.
