Creamy Thai Carrot Soup

I am always on the hunt for recipes that are healthy and tasty.  The foods I eat must be flavorful and easy to make in order to stay successful on my weight loss journey. This Creamy Thai Carrot Soup is packed with unbelievable layers of flavor.  In addition to the great taste it is also very healthy.  I found the original recipe on Weight Watchers (of course) and changed it up a bit to my taste.

Ingredients for Creamy Thai Carrot Soup - another great Weight Watchers recipe

Creamy Thai Carrot Soup

Serving Size: 4

My variation is 1 PointsPlus Value per serving

Ingredients

  • 2 cups low sodium chicken broth
  • 1 pound uncooked baby carrots
  • 1/2 cup uncooked Spanish onion
  • 1 clove of garlic
  • 2 1/4 tsp fresh ginger root
  • 1 1/2 tsp Thai curry paste
  • 7 0z container Fage 2% plain Greek yogurt
  • 2 TBS fresh mint leaves - chopped

Instructions

In a medium saucepan, bring broth, carrots, onion garlic and giner to a boil over medium-high heat. Cover, reduce heat to low and simmer for 20 - 25 minutes, until carrots are tender. Stir in curry paste and Greek yogurt and simmer for 1 minute to blend flavors. Remove from heat and add mint leaves and cool slightly.

Begin ladling ingredients into a blender - being careful as this is still hot - and puree until smooth. You may need to do this in batches, depending on the size of your blender.

**Serve with a tsp of yogurt and fresh mint on top - if you like

**If you would like a more spicy soup, add a bit more curry paste. Be careful as a little bit goes a long way.
