Southern Pecan Pumpkin Spice Granola Healthy Style

Hey y’all…it’s confession time. I hate to admit it – but I am not a fan of pumpkin.  Ironically I love Starbuck’s Pumpkin Spice Latte – go figure.  I know the importance of healthy eating, which brings me to this admission…I am not a fan of breakfast.  I am just not one of those eager beavers who jumps out of bed in the morning who can’t wait to make a fabulous omelet. In my journey to a healthier me, I discovered that I love Fage 2% Greek Yogurt.  The bonus is that it packs in 7 grams of protein and makes me feel full and satisfied.

I like to add crunch to my yogurt so, sometimes I add almonds, pecans or cereal to the top. I just discovered that pumpkin is a superfood, high in fiber and antioxidants and it’s good for your skin.  I embarked to create a healthier granola that included pecans and pumpkin while eliminating hidden oils and fat.

Southern Pecan Pumpkin Spice Granola - and it is Weight Watchers friendly!!

Southern Pecan Pumpkin Spice Granola…Healthy Style

Ingredients

  • 2 Tbs extra virgin olive oil
  • 3/4 tsp pumpkin pie spice
  • 1/3 cup honey or maple syrup
  • 1/3 cup pumpkin puree
  • 2 cups old fashioned oats - not instant
  • 1/2 cup chopped pecans
  • 2 Tbs sesame seeds
  • 1/2 cup dried cranberries

Instructions

Preheat oven to 325 degrees

Place all ingredients in a large mixing bowl. Blend to combine ingredients. Keep stirring until all ingredients are well blended and dry ingredients are evenly coated.

Line a large baking sheet with waxed or parchment paper.

Spread the granola mixture and flatten evenly.

Bake the granola 35-45 minutes, stirring three times, until golden brown.

Cool the granola completely. Store in air-tight containers for up to four weeks.

Sesame seeds for added crunch and flavor. The seeds taste so wonderful after they are toasted in the oven.

I love this granola…the pumpkin and spice have great flavor.  The honey gives just a little sweetness.  The cranberries add just a pinch of tartness. And I love the pecan flavor after they are toasted in the baking process.

Southern Pecan Pumpkin Spice Granola - and it is Weight Watchers friendly!!This granola is delicious on top of my morning yogurt. It’s also a great snack – especially when I’m on the go. I like to keep a little bit in a zip lock bag inside my purse when I’m out and about.

  3. We’ve been making granola for years and I always enjoy trying a new recipe. I love granola but the usual one I get has so many raisins and nuts, I like that you can control how much you put in of each type if you make your own. Love the tropical taste also, this looks delicious. I love all their Grains.
