Healthy Chicken Tortilla Pie

Hey y’all…hope your week is going well. As you  know, Jenn and I shared last week our quest for better health and weight. You can read that post here. This week I created a new dish and I am so excited to share it with you!

I love food that is packed with flavor, and I tend to favor ethnic food and dishes. I really like Mexican food and decided to create something that was on the healthier side. I came up with Healthy Chicken Tortilla Pie!

Healthy Chicken Tortilla Pie

Ingredients

  • 2 cups shredded cooked boneless, skinless chicken breast
  • 1 cup black bean puree - I used seasoned black beans that I pureed myself. You can buy jarred if you prefer - but it's more expensive.
  • 4 (8 Inch) whole wheat flour tortillas (I used organic)
  • 1 cup cheese of your choice. I used low -at sharp cheddar.
  • Cooking spray
  • Optional toppings:
  • avocado, sour cream, plain yogurt, salsa, olives

Instructions

Preheat over to 450 degrees.

Spread 1/4 cup of black bean puree over a tortilla and place in the bottom of an oven proof skillet. Add 1/2 cup cooked chicken. Sprinkle with 1/4 cup cheese. Drizzle 1/4 cup of salsa over the top.

Spread another tortilla with bean puree and place pureed side down. Add more puree on top and repeat layers.

Bake in 450 degree over for 10 minutes or until thoroughly heated through and the cheese is melted. Remove skillet from oven and flip the tortilla onto a plate. Cut the pie into 4 wedges and serve immediately.

You can add toppings of your choice. I chose Fage plain yogurt, avocado and salsa.

I love to use my cast iron skillet. With this recipe it really crisps the tortilla. This is layer number one. You can really make as many layers as you prefer, especially if you have more family members to feed. For Honey Bee and four layered tortillas was plenty for our meal.

I topped mine off with Fage plain yogurt in place of sour cream. I also added smoky fat free salsa…

…cilantro and two small avocado slices.

Healthy Chicken Tortilla Pie I was very happy with the taste, flavor and ease of this dish. It was a very satisfying meal!
