I love food that is packed with flavor, and I tend to favor ethnic food and dishes. I really like Mexican food and decided to create something that was on the healthier side. I came up with Healthy Chicken Tortilla Pie!
I love to use my cast iron skillet. With this recipe it really crisps the tortilla. This is layer number one. You can really make as many layers as you prefer, especially if you have more family members to feed. For Honey Bee and four layered tortillas was plenty for our meal.
I topped mine off with Fage plain yogurt in place of sour cream. I also added smoky fat free salsa…
…cilantro and two small avocado slices.
