Company Spaghetti…

This week I have been thinking a lot about my mom. I lost my mother to breast cancer a few years ago and I miss her every day. I think I missed her especially this week as I received some good news and just wished I could personally tell her all about it. This longing had me thinking of comfort food and some of my moms best dishes…she was an excellent cook!

Mom’s Company Spaghetti is a dish that we all clamored for and couldn’t get enough of. It is so tasty and easy to make – pretty much everything is prepared in one pot. We called it Company Spaghetti because, well she would make it when company came over 🙂 Lets get started!

Here are some of the ingredients…

Company Spaghetti…

I usually pour the ingredients into two smaller pans and freeze one. It freezes very well.

Ingredients

  • 1 1/2 pounds ground chuck
  • 1 bell pepper, chopped
  • 1 large white onion, chopped
  • 1/2 cup celery, chopped
  • 1 - 10 3/4 oz can cream of mushroom soup
  • 1/2 soup can of water
  • 1 - 24 oz can petite diced tomatoes
  • 2 TBS chili powder
  • Salt and pepper to taste
  • 8 oz. pkg spaghetti noodles
  • 1 cup sharp cheddar cheese cut into chunks
  • 8 oz jar/canned olives - they can be black or green
  • 1 - 1 1/2 cup grated cheddar cheese

Instructions

Brown ground chuck. Add next nine ingredients and simmer for 2 hours. Cook spaghetti noodles according to package directions. Combine meat sauce, cheese chunks, olives and cooked spaghetti noodles. Pour into a 3 quart casserole pan or baking dish. Sprinkle with grated cheese. Bake in a 325 degree oven for 15-20 minutes or until bubbly.

The recipe calls for olives…my preference is black olives, and a lot of them 🙂

  1. Spaghetti is one of my all-time comfort foods, whether plain with marinara sauce from a jar, fancy on a restaurant menu, or baked in a casserole.   5. How ironic to see this recipe when I’m at a complete loss at what to prepare for a quite little, last minute dinner party my hubby & I are thowing tomorrow night… Spaghetti is always a hit! Loved the picture of your parents. They made a beautiful couple!
